This easy almond cookie recipe makes light, chewy cookies that are of almond flavor from both ground almonds, almond extract, and sliced almonds.

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup white sugar*
  • 1 egg
  • 1 ¼ cup all-purpose flour
  • ½ cup ground almonds
  • 2 tsp almond extract
  • Sliced almonds for topping

*cookies can also be made using ½ cup powdered sugar

    Instructions

    • Preheat oven to 400 degrees
    • Cream butter and sugar together using an electric mixer until light and fluffy (about 3 minutes). If using powdered sugar instead, cream together with the butter the same way
    • Beat in the egg, ground almonds, and almond extract and mix until smooth
    • Working slowly, add in the flour and mix until fully combined
    • Scoop dough onto a cookie sheet lined with parchment paper and top each dough ball with 2 slivered almonds
    • Bake in preheated oven for 7-8 minutes until very lightly browned
