Ingredients
1
(5 or 6 oz) can tuna fish
⅓
cup cottage cheese
2
tbsp mayonnaise
¼
cup finely chopped red onion
1
celery stalk, finely chopped (about ½ cup)
1
tbsp capers
1
tbsp lemon or lime juice
A pinch or two of dill
2
tbsp minced fresh parsley
1
tsp Dijon or stone-ground mustard
2
slices of toasted bread
Tomato and lettuce (optional)
Instructions
Combine all ingredients in a medium-sized mixing bowl
Mix until well combined
Divide your salad in half if you want to make two sandwiches, or use all in one big sandwich. You can also serve your salad with crackers.
