Ingredients

  • 2 cups cooked brown rice
  • 1 tbsp olive oil
  • 1 yellow onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 2 tbsp chili powder
  • 1 ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp cayenne pepper
  • 1 cup plain Greek yogurt
  • 1 can reduced-fat refried beans
  • ¾ cup grated cheddar cheese
  • ¾ cup grated mozzarella cheese
  • 1 can tomatoes with green chiles
  • Fresh cilantro for serving
  • Chopped green onions for serving

Instructions

  • Preheat the oven to 350ºF. Chop the onion, green bell pepper, and red bell pepper.
  • Add the olive oil to a medium-sized skillet and cook over medium heat, then add the onions and bell peppers. Stir while cooking for about 5 minutes.
  • Add the beef, chili powder, cumin, salt, and peppers and cook for about 5 minutes, until the beef is no longer pink. Add the garlic and cook for 1 minute.
  • Stir in the rice and yogurt.
  • Layer the casserole in a baking dish and bake for 15 minutes uncovered.
